Business Spotlight: New Mule’s Ear Bakery to open at Almont Resort

A fresh-baked addition to the Almont community is on the way.

Mule’s Ear Bakery is set to open Monday, Aug. 17 at Almont Resort, bringing scratch-made breads, pastries, hearty breakfasts, café-style lunches and a welcoming new place to gather.

Located near the resort’s southwest entrance at 10209 CO-135, the bakery will occupy a newly expanded and renovated space. Its name comes from the mule’s ear wildflower, a distinctive bloom found throughout Southwestern Colorado and the surrounding mountain landscapes.

The bakery’s team hopes Mule’s Ear will become just as recognizable and beloved in the community.

Head Baker Lyndi Cuellar, a Colorado native, brings years of experience from professional kitchens. She uses a home-style approach centered on scratch baking, quality ingredients and familiar foods made with care.

Guests can look forward to her fresh-baked cookies, specialty cakes, morning buns, seasonal coffee cakes and jelly donut muffins with house-made jam, along with gluten-free options.

Breakfast will include buttermilk biscuit sandwiches, sourdough waffles, avocado toast, quiche, warm donuts and customizable egg scrambles. Lunch offerings will range from tuna melts, BLTs, grilled cheese sandwiches, Cubanos and roast beef dips to the signature Masa y Papa sandwich.

The menu also will feature Nonna-style pizza by the slice, fresh salads and house-made soft-serve ice cream. Signature items include The Local Favorite breakfast sandwich and a chai-spiced cinnamon roll.

Open from 7 a.m. to 3 p.m. daily, Mule’s Ear Bakery will combine a breakfast café, lunch counter, market and soft-serve shop under one roof. The bakery plans a quiet opening Monday, Aug. 17, with a grand opening planned for Labor Day weekend.

The goal is to create a place where locals and visitors can grab a coffee, enjoy a meal, pick up fresh bread or simply stay awhile.
